“Since then, our app/uninstalled and mandatory compliance webhooks (shop/redact etc.) fail with a 500 on every delivery and retry.”

Uninstall and compliance webhooks return 500 with expiring offline tokens. authenticate.webhook tries to refresh a revoked token for uninstalled shops before the handler runs, so retries fail.
